Blueberry Popsicles
You know what I love? Healthy snacks that the kids will eat. Just check out these blueberry popsicles I made the other day. They are full of antioxidants from the blueberries and high in protein from the Greek yogurt. Considering I am culinary impaired and they turned out great, you can rest assure they are super easy to make.
Blueberry Popsicle (from Disney Family Fun)
11/2 cups fresh blueberries
1 cup water
1/2 cup orange juice
3 tablespoons sugar
1 cup vanilla Greek yogurt
In medium saucepan, simmer blueberries, water, orange juice and sugar for 10 minutes. Let mixture cool for 20 minutes, then blend in food processor until smooth. Stir in greek yogurt then pour mixture into popsicle molds and freeze. Makes 8 popsicles.
Just beware! They are messy!

Those look awesome! I've been wanting to make homemade popsicles all summer. I'm going to have to borrow this recipe for sure!
I wonder if these would work without the yogurt. We try to avoid dairy at my house.
Maybe coconut or soy based ice cream? I'm a queen at adapting because of our allergies!
